Nobody is born knowing how to cook. Every chef you admire started by scrambling their first egg badly. What separates people who become confident cooks from people who order takeout at 35 isn't talent — it's a progression.

Week 1: Heat and salt. Cook one thing every day: eggs three ways, pasta with butter and parmesan, a piece of chicken thigh in a hot pan. The lesson is temperature control — a searing hot pan for chicken, gently warm for eggs, boiling salted water for pasta. Salt at every stage, not just at the end.

Week 2: Simple sauces. A vinaigrette (3 parts oil, 1 part acid, mustard, salt), a pan sauce (deglaze the chicken pan with wine, add butter off heat), and a tomato sauce (garlic in olive oil, canned tomatoes, salt, 20 minutes). These three sauces upgrade every simple protein and vegetable you cook for the rest of your life.

Week 3: Roasting and one-pan meals. A whole roasted chicken. Sheet-pan salmon with vegetables. A pan of roasted potatoes done properly. The lesson is that ovens do most of the work if you set them up right — high heat (425°F), dry surface on the protein, and space between the vegetables.

Week 4: Feed someone. Pick three recipes from week 1-3, plan a menu, shop for it, and cook dinner for a friend. Everything you learned solidifies when the pressure of a deadline meets the joy of feeding a person you like.

What not to do. Don't start with knife skills. Don't buy a $400 pan set. Don't watch three hours of YouTube before you turn on a burner. Cook something small every day. In a month you'll be a different person in the kitchen.
